Yorkshire Stone Square
Yorkshire stone square. (yohrk'-sher ston' skwehr)
An open fermentation vessel with a capacity of 36 hectoliters (28 barrels) unique to the town of Tadcaster in Yorkshire. It was originally made of stone and later of slate, and consists of two separate sections divided by a deck. The wort is fermented in the main (lower) compartment, and the yeast rises over the deck through a manhole that has a 5-inch (15-centimeter) flange. The beer drains back through pipes while the yeast settles and is skimmed off.
