10 min Step Heat to 131.0 F over 10 min 131.0 F
20 min Pull Thick Decoction of mash and boil it slowly 158.0 F
10 min Step Heat to 149.0 F over 10 min 149.0 F
Using RO add 1 tsp Calcium Chloride
1 Dough is 112 deg. and hold for 15 min.
2 Ramp up to 131 degs. and rest for 10 min
3 Pull thick decoction and slowly heat to 158 and rest for 20 min, then boil for 10 min stirring constantly.
4 Meanwhile ramp up main mash to 149 degs and hold.
5 Recombine all and equalize at 158 degs, Rest for 10 min.
6 Mash out at 168 degs collect 7.25 gal.
Chill to 58 degs before oxygenation and pitching.
