| 0.5 lbs | Crystal 60 |
| 1 oz | Carafa I |
| 2 lbs | Munich Light |
| 4.5 lbs | Pilsner |
| 0.5 lbs | Melanoidin |
| 1.5 oz | Hallertauer 3.9% a.a. (60 min) |
| 1/4 tsp | Yeast Nutrient |
| * 1.5L starter |
WLP300 Hefeweizen Ale Yeast |
| Water Treatment |
1 g Gypsum, 3 g CaCl2 |

Directions
Step mash. Acid rest at 100F for 30 minutes. Protein rest at 122F for 15 minutes. Beta rest at 149F for 15 minutes. Alpha rest at 154F for 15 minutes. Mashout at 168F for 15 minutes. Boil 90 minutes. Ferment 18 days at 62F, and secondary for 30 days at 62F. Bottle conditioned to 2.1 volumes CO2.
