Description of this Beer
A real American take on the witbier, this one is very citrus-forward. The yeast leaves a citrus note, the late hopping with Cascade hops leaves a citrusy note, and the use of fresh citrus peels in the boil adds a nice fresh citrus character that guarantees this one will not last long if you brew it in the summer (all the better, because this beer is FAR better fresh).

 

Fermentables

1 lbs flaked oats

 

Hops

.5 oz Cascade (7.2 AA) 10 min

1 oz Cascade (7.2 AA) 0 min

 

Other Ingredients
Amount & Type (herbs, spices, wood, finings, etc.), When/Where Added

 Peel (no pith) of half a tangerine, half a lime, and half a lemon at 15 min

1/2 Tbsp freshly-crushed Coriander at 15 min

 Peel (no pith) of half a tangerine, half a lime, and half a lemon at 0 min

1 Tbsp freshly crushed Coriander at 0 min

Directions
Include mash temps/times, boil times, fermentation temps/duration, etc.

 60 min mash at 149F

Sparge at 170F

60 min boil

Ferment around 70F
