Resinification

resinification. (reh-zin-nuh-fi-kei'-shen)

    The oxidation and polymerization of humulone (alpha acid) and lupulone (beta acid) during the storage of hops. The crystalline bitter acids gradually lose aroma, bittering, and antiseptic power, and are eventually transformed into hard resins that are useless to the brewing process.
