| 7 | pounds high maltose malt extract |
| 3 | pounds frozen raspberries |
| 4 | ounces raspberry extract |

ounce Saaz hop pellets (60 minutes) |
| 3/4 | ounce Hallertau hop pellets (10 minutes) |
| 1 | Vial Red Star champagne yeast |
| 2/3 | cup dextrose (to prime) |
| Original gravity | 1.106 |
| Final gravity | 1.036 |
| Boiling time | 60 minutes |
| Primary fermentation | 6 days at 68 ºF in glass |
| Secondary fermentation | 29 days at 65 ºF in glass |
| Age when judged | 19 months |
Judges' Comments
"Complex aroma-raspberries and plumlike esters, no hops apparent. Some clean alcohol aromas. Good head formation and retention. Clear. Starts with some malt. Has some caramel flavors. Finish is balanced with plenty of alcoholic warmth. Some roasted malts, but raspberries come through nicely. Beautiful beer. Balanced raspberry character. Lots of malt."
"Good raspberry aroma, but none of the melanoidins that are found in most doppelbocks. There is also a slight roastiness. Beautiful deep ruby color and creamy pink head. Excellent clarity and head retention."
