Oligosaccharides

oligosaccharides. (a-li-go-sae'-kuh-raydz)

    Polysaccharides composed of four or more molecules. These sugars are not fermentable by Saccharomyces yeast and include maltotetraose. These are intermediate fractions that occur during the reduction of starch during mashing.
