Ingredients for 5 U.S. gallons (19 liters)
7.0 lb (2.95 kg) light malt extract
3.0 lb (1.36 kg) American white wheat
1.0 lb (0.9 kg) flaked wheat
0.625 oz (17.7 g) Spalt whole hops, 5% alpha acid (60 min.)
14.0 lb (6.35 kg) fresh peaches (in secondary)
Wyeast No. 3278 Belgian Lambic Blend
1.0 tsp yeast nutrient
Forced CO2 to carbonate
Original Specific Gravity: 1.060
Final Specific Gravity: 1.010
Boiling Time: grains 90 minutes
Primary Fermentation: 180 days at 66° F (19° C)
Secondary Fermentation: 180 days at 66° F (19° C)

Three different batches were made at six-month intervals and blended.
