Description of this Beer
This is a witbier with honey to help dry it out, as well as add a nice "local character" to your brew. This recipe also includes an optional addition of hibiscus tea (added in the glass or in the keg or at bottling) to make it pink, slightly more floral and tart, and very very pretty. Fermentables
Amount & Type of Fementable (grain, extract, sugar, fruit, etc.)

9 lbs Pilsner Malt (I used Gambrinus)

8 lbs Flaked Wheat

3 lbs Domestic 2-Row

3 lbs Raw Wheat Berries (crushed fine with my malt mill)

1 lb Minute-Oats

2 lbs Rice Hulls (added to bottom of mash tun before any other grains

1 lb 12 oz Neutral Local Honey added at high krausen (I used Sage honey)

 

Hops
Amount & Type of Hops, %AA, pellet/whole/plug, time in boil/FWH/Dry Hop/Mash Hop

 2 oz Willamette (4.5% AA) Whole Hops 60 min

.5 oz Citra (14% AA) Whole Hops 5 min

 

Other Ingredients
Amount & Type (herbs, spices, wood, finings, etc.), When/Where Added

 1 oz Fresh Blood Orange Peel 5 min 

.5 oz Indian Coriander (crushed) 5 min

1 Cardamom Pod (crushed) 5 min

.2 oz Fresh Lime Peel 5 min

(OPTIONAL) 1-4L unsweetened hibiscus tea (at kegging/bottling/serving)

 

Yeast
Type of Yeast (e.g. Wyeast 1056, White Labs WLP001) Amount Pitched
 Wyeast 3463 Forbidden Fruit  3L stir-plate starter

 

Directions
Include mash temps/times, boil times, fermentation temps/duration, etc.

Mash at 149F for 60 min.

Boil for 90 min (less if you want to retain lighter color)

Pitch and ferment at 72-74F 

Add honey at high krausen

When fermentation is complete and beer tastes good (about 3 weeks), rack into kegs or bottling bucket. If pink color and hibiscus flavor/aroma are desired, then add hibiscus tea to bottling bucket/keg/or in the glass. I found that 2L of hibiscus tea added to a keg was a good amount for flavor and appearance, for what I was looking for. You may want more or less depending on how strong your tea is. Hibiscus tea can be found in loose flower form at a Latino market (it will be called Floras de Jamaica), or you can get tea bags that are 100% hibiscus from a good supermarket or tea shop. Either way, make it extra potent, so the color is similar to cranberry juice, then add the strained tea to your keg or bottling bucket. Smaller amounts can be added to your glass. The ladies will love the pink color and this is a fun way to get 2 different beers from a 10-11 gallon batch.
