Malting

malting. (mohl’-ting)
The process of converting barley into malt. It is divided into three stages: (1) steeping—the barley is immersed in water until a chosen moisture level has been reached; (2) germination—the wet barley is allowed to germinate under controlled conditions; and (3) kilning—the germinated barley (green malt) is heat dried and roasted to different grades.
