Liquid Malt Extract

Liquid Malt Extract, often referred to as LME, is made from barley malt that has gone through a mashing process to convert the starches in the malt into sugars.  The sweet liquor created by the mash is then concentrated by boiling it under a vacuum.  Liquid malt extract comes in various colors, most commonly Light, Amber, or Dark.
