Original Specific Gravity: 1.16
Final Specific Gravity: 1.051
Boil Time: No Boil (30 minutes at 180F to pasteurize the honey)

Ingredients

17 lbs Local Wildflower Honey
5 lbs Mashed Blueberries

Wyeast 4184 Sweet Mead

Directions

3 gallons of Poland Springs water  was combined with the honey. Held at 180F for 30 minutes, cooled, then added to fermenter with mashed berries. Added 5tsp yeast energizer. Fermented 14 days at 70F, then secondary for 150 days at 70F.
