Flavoring Hops. (flei'-ver-ing haps')
Hops added to the boiling wort to impart bitterness to beer as opposed to finishing hops, which contribute its aroma and hop character. Alpha acids are not soluble in water or wort and only become so when they isomerize during the boil. The quantity of hops to be added varies according to taste, variety of hops, degree of bitterness desired, and brewing method.
