Hops added to the wort near the end of the boiling phase or in the fermentation vessel to impart hops' aroma and character to the beer as opposed to the hops' flavoring, which also contributes to the beer's bitterness. Some brewers recommend adding finishing hops one or two minutes before cooling whereas other suggest ten of fifteen minutes. Because finishing hops are selected for their aroma rather than for their bittering power, their alpha acid content is usually low. Syn: aroma hops, aromatic hops.
