    The maximum apparent attenuation attainable by a particular wort as determined in a laboratory. The final attenuation depends above all on the proportion of fermentable sugars in the wort, most of which have been transformed before bottling to avoid biological reactions that affect the flavor, head retention, and stability of the beer.
