Eisbock
eisbock. (ays'-bohk)
The strongest type of bock beers. These ice beers are produced by lagering beer in very cold cellars to the freezing point of water (32 °F, 0 °C, well above that of alcohol -173°F, -115 °C) and removing some of the iced water (hence, the name) thereby increasing the alcoholic strength of the beer. Kulminator, the strongest doppelbock in the world (28 ° P, 13.2 percent alcohol by volume) is produced by this method at the Erste Kulmbacher Brewery in Kulmbach near Bayreuth. See also: bockbier; congelation; dopplebock; ice beer.
