Diacetyl

diacetyl. (day-ae’-suh-tel)

    A volatile compound produced in beer by the oxidative decarboxylation of acetohydroxyl acids (2-acetalactate and 2-acetohydroxybutyrate) produced by yeasts. Diacetyls contribute a butterscotch flavor to beer. See also: carbonyls.
