2.0 lb (907 g) red fleshed crabapples, pressed
8.0 oz (227 g) light brown sugar
Pectic Enzyme
5.0 g Premier Cuvee Yeast
Forced CO2 to carbonate
Original Specific Gravity: 1.056
Final Specific Gravity: 1.000
Primary Fermentation: 30 days at 55° F (13° C) in glass
Secondary Fermentation: 4 months at <50° F (<10° C) in glass

Back sweetened with simple syrup to 1.006, sorbated.
