Corky's Classic American Pilsner
Volume = 5.5 gallons
60 minute boil
OG = 1.057
FG = 1.013
6.75 lbs German Pilsner Malt
1.00 lbs Vienna Malt
2.80 lbs Polenta or Corn Grits
24 gms Nugget Hop Pellets 12.8% AA for 60 min
21 gms Vanguard Hop Pellets 5.0% AA for 15 min
28 gms Hallertau Hersbrucker Hop Pellets 4.4% AA at end of boil
Start the mash by mixing 7 qts of 140 F water with 10% of the malt and all the corn grits. This will settle at 130 F, hold for 10 minutes. Slowly raise the temp to 154 F and hold for 10 minutes. Slowly raise to boiling and boil for 10 - 15 minutes. Meanwhile, begin the main mash at 135 F. Once the two mashes are mixed it should settle at 154 F. Begin sparging 30 minutes later.
WLP 810 White labs San Francisco Lager yeast - Ferment at 60 F for 14 days
Cold condition for 2-3 weeks at 36 F
