Amines

amines. (uh-meenz')

    Volatiles found in beer, most of which are derived from ammonia originating from malt and hops through replacement of one or more hydrogen atoms by organic radicals. Amines form during the germination process. It has been suggested that they are responsible for the characteristic aroma of germinated barley. The concentration of volatile amines is greater in hops than in malt, and Fuggles has the highest concentration followed by Alsace, Backa, and Hallertau.
