    Any of a large class of organic compounds derived from alcohols through dehydrogenation (oxidation) and containing the grouping (or radical -CHO. When aldehydes are oxidized further, acides are produced. Some aldehydes contribute to the bouquet of beer. Etym: From alcohol and dehydrogenation.
