Air Rest

air rest. (ehyr' rehst')

    An interruption in the steeping process to allow oxygen to get through and stimulate growth and uniform germination. This technique, now regarded as traditional, was first developed in the early 196s to overcome dormancy in water-sensitive types of barley. See also: airing; steeping.
