Acid Rest

acid rest. (ae'-sid rehst)

    A stage of the mashing process that allows the enzyme phytase to convert phytic acid to phosphoric acid to acidify the mash. During this rest, the mash is held at 95–110 °F (35–40 °C) for fifteen to thirty minutes.
